Gramma's Banana Bread

Preheat oven to 350 F
You will need

1/4 cup           butter or margarine
1 cup              sugar      (or 3/4 cup for a less sweet version)
2                     eggs
1 1/2 cups      flour
1 tsp               baking soda
1/4 tsp            salt   
3-6                  bananas (mashed)


Cream together butter and sugar until light and fluffy. 
Add the eggs and mix until smooth.  
Next add the flour baking soda and salt. Mix until incorperated
add bananas and mix well

pour into greased loaf pan or  lined muffin tin

makes 1 loaf  or 24 muffins
BAKE FOR
loaf    ~    40-50 min  (check at 30 min (insert toothpick...if it comes out clean it is done))
muffins    ~   20-30 min

*Note* The more bananas you use the longer it will take to cook

  1. Jacquie, when you speak about the bananas, are you speaking about ripe ones or can one use over ripe ones which have been kept in the freezer? I ask you because I had some that were starting to get over ripe and were a bit funky to eat, so I popped them in the freezer, where the skin has (of course) gone completely black; but are still good to use. I've been wanting to use them, but was not quite sure if they would go good in a banana bread. Let me know because I would love to try this recipe out. Thanks. Leyla XOXO
