Spritz Cookies

1 lb. butter
1 cup icing
1/2 cup corn starch
3 cups flour

preheat oven to 325

Cream together butter and icing sugar, add the cornstarch and flour and beat until mixed well
Using a cookie press (or icing bag) press onto cookie sheet
bake for 5-7 minutes

Chocolate Chip Cookies

1/2 cup shortening
1/4 cup white sugar
1/2 cup brown sugar
1/2 tsp vanila
1 egg beaten
1 cup + 2 Tbsp flour
1/2 tsp salt
1/2 baking soda
6 oz. chocolate chips (approx 1 cup)

Preheat oven to 375 degrees

Cream together the shortening, vanilla and sugars until light and fluffy. Fold in egg and beat. Add flour, soda and salt. stir in chips and mix thoroughly. Drop small spoonfuls onto greased baking sheet or roll into balls.
Bake for 10 - 12 minutes

Sugar cookies

3/4 cups Butter
1 Cup Sugar
2 Eggs
1 tsp Vanilla (optional; substitute lemon extract)
2 1/4 cup flour
1 1/2 tsp baking powder


Cream together butter and sugar, add eggs.  Add in the dry ingrediants and mix.  Chill for at least 2 hours.
roll out onto a floured surface. And cut using your favorite cookie cutter. Great for christmas, valentines, halloween, and easter

Chocolate Cake (Grandma Hodgson)

1/2 cup butter
1 1/2 cup white sugar
2 eggs
1 1/3 cup flour
1 tsp. vanilla
3/4 cup milk
2 tsp baking powder
1/2 cup cocoa fill up tp 1 cup with hot water to dissolve cocoa

Preheat oven to 400
cream together the butter and sugar. Beat in the eggs and milk add the remaining ingrediants and beat together until creamy
Bake at 400 degrees for the first 20 mminutes and then turn down to 350 for remaining 25 minuts

Coffee Crisp (Square)

1/2 cups corn syrup
1/2 cup br sugar  
melt over heat in a large sauce pan

add

3 cups peanut butter
1/2 cup butter
1 tsp vanilla
pinch of salt
continue to Blend
Stirring frequently as it WILL burn

add 6 cups of corn flakes

Press into a buttered 9 X13
Icing
2 Tbsp  butter
3 Tbsp cocoa
cream together
add 1 cup Icing sugar

in a separate cup
mix
2 Tbsp Instant coffee
5 Tbsp HOT WATER
Add  1 Tbsp at a time to ICING mixture ....you want a thicker  consistency


This square has been made by my grandmother for many years and is not meant to be eaten by those who are diabetic... Sorry!

So Yummy Lasagna

  • This lasagna has been made by my grandma for many years. Her version has less meat but I now add more. This the only meal that my husband will eat for leftovers (all week sometimes! LOL) It freezes great and is perfect to take for lunch......I hope you will enjoy it as much as we all do
  • KEEP IN MIND I MAKE THIS FOR MY LARGE FAMILY
  • I have even substituted a Brown Rice Pasta for family that can not eat Wheat

You will need:

One  9X15 Pan
1 and 1/2 packages              Cattelli - Express Oven ready noodles
2 cans                Cattelli or your favorite Spagetti sauce (Even a creamy Tomato)
1 or 2 Lbs.         ground beef
6                        HARD BOILED EGGS (important)
2 large containers (750 ML each)  Cottage Cheese
4 cups  grated cheese (Old chedder, but I use Marble)
4 cups grated Mozzarella   For the TOP

Pre-Heat Oven to 325 F
Cook ground beef thorougly. Mix in the sauce
Mix Cottage cheese and Cheddar in a bowl set aside

Layer as follows
1. Layer of meat sauce
2. Grate 2 eggs over meat
3. Layer of noodles
4. Spread half of cottage cheese mixture
5. Layer of noodles
6. Layer of meat sauce
7. Grate 2 eggs over meat sauce
8. Layer of noodles
9. Spread 2nd half of cottage cheese mixture
10. Layer of noodles
11. Layer of meat
12. Grate last 2 eggs over meat
13. Top with the grated Mozzarella

Bake for Approx. 60 -80  min  until Cheese is Golden

Gramma's Banana Bread

Preheat oven to 350 F
You will need

1/4 cup           butter or margarine
1 cup              sugar      (or 3/4 cup for a less sweet version)
2                     eggs
1 1/2 cups      flour
1 tsp               baking soda
1/4 tsp            salt   
3-6                  bananas (mashed)


Cream together butter and sugar until light and fluffy. 
Add the eggs and mix until smooth.  
Next add the flour baking soda and salt. Mix until incorperated
add bananas and mix well

pour into greased loaf pan or  lined muffin tin

makes 1 loaf  or 24 muffins
BAKE FOR
loaf    ~    40-50 min  (check at 30 min (insert toothpick...if it comes out clean it is done))
muffins    ~   20-30 min

*Note* The more bananas you use the longer it will take to cook
